The technology of speech recognition and synthesis is powerful and subtle. Adding the concept of dialog, which is needed for all but the most trivial applications, is yet another layer of complexity.
From outside the technical speech community, how can you really judge what can and can't be done? You will want independent opinions and advice in addition to the opinions and advice of the individual vendors.
